Ingredients

30 g (4 tbs) Golden Stevia sweetener (for heating)
2 dl (2 cups) of water
15 g (2 tbs) Gingerbread spices mix (Santa Maria)
30 g (4 tbs) Golden Stevia sweetener (for sweetening)
2 dl (2 cups) of water
200 g (1 cup) Butter
250 g (2 cups) Whole Oat Flour
250 g (2 cups) Wheat flour
1 ts soda or baking powder
1 egg

Glaze:

1 egg
1/2 espresso
1 tsp (2g) Golden Stevia Sweetener

Instructions

1.Take the pot with a thick bottom. Sprinkle an even layer of Stevia as you heat the stevia, the edges and bottom melt first and start browning.
Stevia has darkened to the point of being almost burnt — when it’s dark amber in colour and smoking, take it off the heat and stop the cooking by pouring 2 dl water over burnt Stevia.

2. Add gingerbread spices mix to Stevia burnt water mix

3. Add then 200 grams butter to liquid and stir or whisk the gingerbread base liquid mix over low heat until it’s smooth

4. Add 30 g Golden Stevia powder to the gingerbread base because Stevia had lost sweetness over the burning process

5. In a large bowl, whisk together 250 g flour Whole Oat Flour and 250 g Wheat flour and soda

6. Mix gingerbread base liquid mix with the dry ingredients

7. Add 1 egg

8. Mix and knead the dough until it comes together and gets buttery and brown. Flatten into a disc shape, cover with cling wrap and refrigerate for 30-40 minutes or until just firm.

9. Roll out dough on a floured surface to ½ cm thickness and cut shapes with cookie cutters.

10. The shaped products are placed on a baking tray and brushed with glaze from a whole beaten egg, diluted with a small quantity of cafe and stevia.

11. Preheat oven to a 180-degree. Transfer shapes to the prepared baking sheets, and bake for 10 to 14 minutes, or until the cookies have set around the edges and just a little softer towards the centres.

12. You may decorate cooled gingerbread with sprinkling them over with Stevia.
